Spring has finally arrived and I'm so happy!  What makes me even happier is all the great classes, both old and new, that we're offering this season.  Many start in just a few days, so be sure to hurry over and check them out.  You'll find all our classes on our website www.intoyoga.ca.

Along with our typical Yoga, Pilates and Baby Sign Language classes, here's a preview of some new offerings for Spring.

Partner Yoga will be held on Sunday mornings at Hillcrest Community Center.  Grab a friend or get paired up in class.  Either way you'll enjoy this fun explorative class.

Kundalini Yoga expands from Kerrisdale CC into Champlain Heights and Kitsilano too.  Work deeper on
concentration and aspects of mental and physical discipline.  Check our schedule to find out days and times.

We're adding Pilates Wednesday afternoons at Sunset CC and adding a little
ballet barre repertoire to it at Marpole CC Thursday nights and calling it Dancing Pilates

Got kids?  Try our Family Yoga (ages 6 and up with at least one adult) at Dunbar Community Center Tues evenings or leave your 5 - 8 year old with us Monday afternoons from 4-5pm for Kid's Yoga also at Dunbar.

For something completely new, bring your 2 - 4 year old to Roundhouse CC Friday mornings and help get their imagination and creativity juices going while working with their mobility in our Animal Kingdom classes. They'll love it!

Newly added to our Baby Sign Language locations is West End Community Center Wednesday afternoons.  Learn how to teach your baby (up to 24 months) simple American Sign Language to help alleviate a lot of unwanted frustration.

Be sure to jump over to www.intoyoga.ca to check out all the classes above, and so much more, and get registered right away!

Hope you enjoy this month's newsletter.

Boat Pose

1. Sit with legs extended, arms at sides.

2. Bend your knees into your chest and tipping back slightly lift feet from floor, keeping knees bent.

3. Exhaling, hold the back of each thigh, keeping the legs together while extending the legs and drawing the tummy in.

4.  Release arms and bring them overhead beside ears.

5. Hold posture and breathe.  Try to keep spine long and legs straight.

6. Release.

NOTE:  An easier version would be to keep the legs bent so the shins are parallel with the ceiling while continuing to hold the back of the thighs.

7 Things Mindful People Do and How to Get Started
by Elisha Goldstein, Ph.D.

One of the essential attitudes of mindfulness is a beginner’s mind. This is engaging something as if for the very first time. People who practice mindfulness bring this attitude with them throughout the day. When they take a shower, they might imagine it was the first time feeling the water, smelling the soap, or watching the steam as it shifts and changes before their eyes. Novelty is one of the fastest routes to creating new neural connections.  To continue reading, click here.

Polenta Lazagna  (serves 6)
Original Recipe

Ingredients:

Polenta
4 cups water
1 1/4 cups polenta or cornmeal
1/4 tsp. chopped fresh rosemary

Vegetable Filling
1 large eggplant
1 large red bell pepper

2 cups diced mushrooms

1 cup diced onion

2 cloves garlic, minced

2 Tbs. minced fresh basil

2 Tbs. minced fresh oregano

1/2 cup cooked beans

4 oz grated nonfat mozzarella or mozzarella-style soy cheese

3 cups nonfat marinara sauce

1/4 cup grated Parmesan-style soy cheese

Preparation
:

1. To make polenta, in large saucepan, bring water to a boil over medium-high heat. Gradually whisk in polenta. Stir with whisk, and cook until polenta is thick, about 10 minutes. Season with rosemary and salt and pepper to taste.

2. Pour polenta into two 8x8-inch baking pans until 3/4-inch thick. (You will need two layers of polenta.) Alternatively, pour polenta into 1 large pan and, when cool, cut polenta into two layers to fit size of 8x12-inch lasagna pan. Smooth and level surface with spoon. Let cool, and refrigerate for 1 hour or until firm.

3. Preheat oven to 400°F.

4. To roast eggplant, using a knife tip or fork, punch several holes in eggplant, and roast for 45 minutes, or until flesh is soft and skin is charred. Alternatively, grill or broil eggplant. Cut in half and, with spoon, scrape soft flesh from skin and chop coarsely. Increase temperature to 450°F.

5. To roast pepper, place on baking sheet, and cook, turning, until skin chars and flesh softens. Remove from heat, peel, seed and cut into strips. Set aside.

6. Unmold polenta, taking care not to break. If using two 8x8-inch pans, cut the pieces so they fit in 8x12-inch lasagna pan. Reserve single piece of polenta for top layer.

7. Reduce heat to 350°F.

8. To make vegetable filling, in saucepan, combine mushrooms, onions, garlic and 1/4 cup water, and cook over medium heat, covered, until onions are soft. Uncover, and cook until liquid evaporates.

9. Transfer to large bowl, and stir in eggplant, pepper, basil, oregano, beans and soy mozzarella-style cheese. Spread 1 cup marinara sauce in bottom of lasagna pan. Top with layer of polenta, add layer of filling, spreading it evenly, then another layer of polenta. Add remaining marinara sauce. Top with Parmesan-style cheese. Cover baking dish, or make double layer of parchment paper under aluminum foil to cover dish.

10. Bake for 30 minutes, or until thoroughly heated through. Remove from oven, and let stand 10 minutes before slicing.
